Sunny Stuffed Pepper

Yellow bell pepper
1/2 cup parboiled brown rice
1/2 cup parboiled red quinoa
1/2 cup mashed soybean
Pre-soaked, drained pinto beans
Chopped zucchini
Chopped Spanish and/or red onion
Shredded carrot
Shredded cabbage
Sliced cremini mushrooms
1/4 tsp truffle oil
Gluten free breadcrumbs
Cheddar style Daiya
Gluten free tomato
Basil to taste

Ayurvedic supplements:
1tbsp Maca powder
1tsp amla
1 tsp ashwagandha
15-20 drops holy basil elixir

Bake @ 350 for approximately 45 minutes.
